An exciting new addition Caviste! Ventoura is based Fontenay-Près-Chablis in Thomas and his father Claude farm their 11 hectares of Chablis vines on the Kimmeridgian, marly, chalk, clayey and limestone in perfect harmony with their environment. Whilst the Domaine’s holding date backed to Thomas’ grandfather in 1953 it was only in 2014 that Thomas ceased the sale of grapes to the vast La Chablissien co-op and went out on his own. Average vine age is 30+ years which are farmed sustainably without herbicides and insecticides, the soil is ploughed regularly for vitality and aeration. Elevage is uniquely in stainless steel, all natural ferments and some fine lees are kept.
